Research Interests

Mark Swanson, an economic and ecological anthropologist by training, studies food systems and their effect on the health of individuals and communities, particularly in rural areas. He is particularly interested in local food systems and how locally-produced foods can reach a full range community members. Swanson’s research priorities include the assessment of farm to school cafeteria programs as a nutrition intervention, the development of more accurate measurement tools of student food consumption, and exploring the role of the food environment in shaping food consumption habits.
